Never Boring Grilled Tofu Salad + Miso Dressing

1 head of romaine lettuce (or 1/2 cup brown rice)
2 spring onions, chopped
2/3 cup frozen edamame
1 avocado, sliced
1 mango, cubed
optional ingredients: cilantro, cucumber, jalapeno pepper, grated carrots
Tofu marinade ingredients
1 tbsp sesame oil
1 tsp red chili flakes
1 tsp chinese five spice
3 tbsp soy sauce
Salad dressing ingredients
1 tbsp miso paste
1/2 tsp grated ginger
1 tbsp sesame oil
2 tbsp olive oil
1 1/2 tbsp honey, or to desired sweetness
1 tsp chili garlic sauce or sriracha
1Combine marinade ingredients into a bowl. Dump the dried, sliced tofu into a Ziploc bag and pour marinade on top. Seal and place in fridge, a minimum of 30 minutes before cooking.
2Preheat barbecue to 400 degrees Celsius.
3Combine salad dressing ingredients into a bowl, whisk, and set aside.
4Combine salad ingredients excluding marinating tofu. If your edamame is frozen, microwave for 30-45 seconds on high or until warm and place in salad.
5Place the tofu on the preheated grill, and cook for 5 minutes a side, or until golden (with charred marks). Remove from heat and place on top of salad.
6Top each salad with dressing. Mix together, or mix while eating. Enjoy!
If using cilantro, exclude from combined salad ingredients and sprinkle on top at the end.
