Mrs Trask's Rhubarb Clafoutis

This recipe is a simple, delicious way to use some rhubarb from your garden. It can be eaten warm or cold, and served with sour cream or whipped cream.

Main Ingredients

2 cups thinly sliced rhubarb

3 eggs, beaten

1/2 cup sugar

1/4 cup milk

1 tbsp melted butter

1/2 cup flour

pinch salt

1 teaspoon vanilla


1Preheat oven to 375.

2Grease quiche pan or large pie plate. Spread sliced rhubarb evenly in the pan.

3Combine eggs, sugar, and melted butter in a medium bowl. Whisk in flour and salt. Add milk and vanilla and whisk to combine. Pour over rhubarb and bake for 35 minutes.

4Serve topped with sour cream or whipped cream.

Additional Notes

This recipe can also be made with other fruit or berries - blueberries are delicious!
