These Morning Glory Muffins are stuffed with carrots and apples for a delicious breakfast or treat. Great for kids and busy mornings.

1 egg
1/2 cup dairy-free milk
1/2 cup oil
1 tablespoon maple syrup or molasses
1 tablespoon of orange juice (preferrably one squeezed orange)
4 whole carrot sticks (washed and diced small or shredded)
1 apple (i used gala. washed and diced small)
2 cups flour (i prefer gluten-free flour mixes)
2 tsp cinnamon
2 tsp salt
2 tsp all spice
2 tsp baking soda
2 tablespoons flax seed and/or hemp seeds
walnuts or pecans are optional
1Preheat oven to 350 F
2Mix all of the wet ingredients (including apples and carrots)
3In a seperate bowl mix all of the dry ingredients
4Slowly mix wet into dry ingredients
5Spray a 12 muffin tin pan
6Pour and bake checking at 12 minutes
