Morning Buzz Oatmeal Cookies

1/2 cup melted coconut oil
3/4 cup coconut sugar
2 tablespoons molasses
1 teaspoon vanilla extract
1 3/4 cups white whole wheat flour
2 cups old fashioned oats
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons freshly ground coffee (finely ground)
1 teaspoon sea salt
1/2 tablespoon cinnamon
1 cup semi sweet or dark chocolate chunks
1In a bowl, combine the sugar, molasses, and coconut oil. Then mix in the eggs and vanilla.
2In a separate bowl combine the flour, baking, soda, baking powder, salt, ground coffee, and cinnamon. Add this dry mix to the bowl with the coconut oil and sugar in batches.
3Once incorporated, stir in the oats. Lastly, add in the chocolate.
4Chill the batter for about 1 hours.
5Preheat your oven to 350 degrees. On a lined baking sheet, add a scoopful (a little more than a tablespoon- a cookie scooper is useful here!) of the batter. Bake for 12 minutes.
6Allow the cookies to cool for 5 minutes on the baking sheet. Then transfer to a wire rack to allow them to cool fully.
