Mixed Berry Vanilla Chia Jam

Main Ingredients

250 grams of mixed berries. i use frozen for convenience. allow them to thoroughly defrost for at least an hour before using.

2 tablespoons of water

1/2 juice of a lemon

2 tablespoons of agave

1/2 a teaspoon of vanilla essence

2 tablespoons of chia seeds

Preparation

1Simmer the berries in a pan over a medium heat with the water and lemon juice until they are all softened down. Approx twenty minutes.

2If you like your jam smooth, using a hand blender or blender, blend the berry mixture. I like mine chunky so I ignore this step but use a potato masher to mash the bigger berries down.

3Stir in the sweetener, the vanilla essence and the chia seeds.

4Stir again after about five minutes to make sure the chia seeds are evenly mixed.

5Pour into a sterilised jar ( to sterilise the jars either take them fresh from your dishwasher or else wash them thoroughly and dry in a 130* oven.

6Store in the fridge for up to 3 weeks.
