Mexican Veggie Pasta

Main Ingredients

1 1/2 cups brown rice pasta (i used shell shapes)

1/2 cup salsa

1 head broccoli, washed and chopped

2 medium carrots, washed and cut into coins

1 small onion, diced

3/4 tsp cumin

1/4 tsp chili powder

1 1/2 tbsp coconut oil

himalayan sea salt, to taste

ground black pepper, to taste

10 spears asparagus, chopped into small pieces

15 ( ounce) can black beans, rinsed and drained

to serve (optional):

1 avocado, diced

salad greens

sour cream (vegan or dairy based)

Preparation

1Gather onion, carrots, broccoli, and asparagus. Wash and chop veggies.

2Fill a large pot with water and bring to a boil. Add in a pinch of salt and add in your pasta. Cook pasta according to package directions.

3While the pasta is cooking, in a large skillet, melt coconut oil over medium high heat. Add in onions, salt, pepper, and carrots. Cook for 3-5 minutes, allowing these two to soften and for the onions to become translucent.

4After the onions are translucent, add in broccoli, asparagus, cumin, chili powder, black beans, and salsa. Cook for 7-10 minutes until flavors have melded and veggies are tender. Turn off heat and set aside.

5Once pasta has finished cooking, drain and pour into the skillet with the veggies. Mix well. Set aside.

6Dice avocado. Wash and rinse salad greens. To serve, place pasta over top of fresh salad greens. Top with avocado, sour cream, and extra salsa if desired. Enjoy!

Additional Notes

This pasta can be substituted for regular pasta, quinoa pasta, and even rice/corn blend pasta.

Add whatever veggies and beans you'd like. This dish is totally flexible and forgiving. A great #fastfix!
