Meatloaf Meatballs

Main Ingredients

2 lbs ground turkey (85/15, 90/10 or 93/7)

1 onion, finely diced

2 tbsp butter

1/2 c. gluten free breadcrumbs

2 eggs, beaten

10 tbsp ketchup

2 tbsp brown sugar

1 tsp mustard powder

4 tbsp gluten free teriyaki

Preparation

1Preheat oven to 425 degrees Fahrenheit.

2Saute onion in butter over medium heat until soft. Add breadcrumbs to softened onions and remove from heat. Allow mixture to cool.

3Add cooled onion breadcrumb mixture to beaten eggs and mix.

4To the onion, breadcrumb, egg mixture add your ground turkey. Mix until combined.

5Form into balls. I use a 1.25 inch cookie scoop to ensure the meatballs are uniform in size.

6Line a baking sheet with non-stick foil. Place meatballs on sheet, ensuring the balls are as close together as possible during cooking.

7Mix the ketchup, brown sugar, mustard powder and teriyaki sauce together and top the meatballs with the sauce.

8Bake for approximately 30 minutes; cooking time will depend on the size of the meatballs.

Additional Notes

You can turn on your broiler for the last 5 minutes of cooking for a more caramelized meatball. But keep an eye on it, the sauce can burn if left too long!
