Meatless Monday Ratatouille
This classic dish is vegetarian and vegan!

3 cups homemade tomato sauce or crushed tomatoes
3 tbsp olive oil
1 tsp apple cider vinegar
2 cloves of garlic, minced
3 heaping tsp of french spices
1 tsp salt
1 tsp pepper
1 tsp chili pepper (or more if you want a spicier dish)
3 medium sweet/ red onions, sliced
3 large zucchinis, sliced
1 eggplant, sliced
9 tomatoes, sliced
9 potatoes, sliced
olive oil and fresh basil for garnish
1Preheat oven to 350 degrees F
2If you're making your own sauce allow yourself an extra 30 minutes for prep.
3Combine tomato sauce, oil, vinegar , garlic, and spices in a large pot. Stir on medium heat for 3-5 minutes to blend the flavors.
4Take sliced potatoes and microwave for 5 minutes, preferably in a steamer to begin the cooking process.
5Pour sauce into a large casserole dish, approximately 1 inch high.
6Add sliced vegetables and potatoes in a pattern of choice.
7Sprinkle with olive oil and chopped up basil
8Cover with tinfoil and cook for 30 minutes
9After 30 minutes remove tinfoil and bake for another 30 minutes or until sauce is bubbling.
