Marionberry Overnight Oat Parfait

1 cup marionberries (blackberries, strawberries, or blueberries would also work)
2 tbsp chia seeds
1/2 cup water
1 cup almond, soy, or coconut milk
3 tbsp maple syrup
1/2 tsp cinnamon
2/3 cup oats
1In a small pot, heat the berries, chia seeds, and water over medium-low heat. Allow it to simmer for 15 minutes, while stirring and gently mashing the berries.
2While the berry jam is cooking, prepare the overnight oats. In a blender, place the almond milk, banana, maple syrup, and cinnamon. Blend on high for 30 seconds.
3Place the oats in small container with a lid. Pour the milk mixture over the oats and stir to combine. Cover and refrigerate overnight.
4When the berry jam has formed, remove from heat and let cool Store in a container and refrigerate overnight.
5In the morning, layer the oats and jam in a glass or mason jar. Top with shredded coconut, nuts, seeds, or drizzle with peanut butter!
