Marinara (simple, Vegan, Oil-free)
A classic marinara sauce made with fresh tomatoes and no oil!

1 cup onion, chopped
2 cloves of garlic, minced
3 cups tomatoes, diced
3 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
2 tablespoons nutritional yeast (optional)
1/2 teaspoon salt
1/3 teaspoon ground black pepper
1 1/2 teaspoon apple cider vinegar
1In a pan over medium heat, bring a few tablespoons of water or broth to simmer, then add garlic and onions. Stir and cook for 7-8 minutes until onions are translucent.
2Add the tomatoes, tomato paste, and all spices. Stir and cook for 10 minutes, then remove from heat and add the vinegar. Allow to cool and transfer to a blender or use an immersion blender to blend the sauce to a point where it still has some texture and isn't overly creamy. Alternatively leave the sauce chunky if you prefer it that way!
3Pour into a jar, cover, and store in the fridge for up to one week.
