Main Ingredients

2 generous cups flour

2 tbsp baking powder

1/2 tsp salt

room temperature water

olive oil or other oil / fat for cooking


1In a mixing bowl, combine flour, baking powder, and salt. Add water a bit at a time and mix until the dough comes together - it should look a bit sticky. Turn dough out onto a floured surface and form into a disk the same diameter as your frying pan.

2Heat 1/4 cup olive oil in 12" cast iron frying pan over medium-high heat until water dances when sprinkled in it.

3Gently place dough into oil and cook for about 15 minutes, adjusting heat as needed. When the bottom is golden, carefully flip the dough using oven mitts or a spatula and cook through, checking centre to ensure doneness.

Additional Notes

Serve with butter and molasses.
