Maple Bacon Pecan Pancakes

How do you make a breakfast that's already super yummy even better? Add pecans. And bacon. These maple bacon pecan pancakes take a little more effort but they're definitely worth it.

Main Ingredients

3 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon salt

1/4 cup white sugar

1 tablespoon pure maple syrup

2 - 2/3 cup milk (room temperature)

3 large eggs, beaten

6 tablespoons butter, melted and cooled (i did 4t butter, 2t bacon grease)

1 tablespoon pure vanilla extract

1 cup bacon bits

1 - 1/2 cups chopped pecans

1 tablespoon butter or bacon grease

1 pinch of salt

pure maple syrup


1Fry up some bacon and chop into bacon bits (enough for 1 cup bits). Reserve grease.

2Lightly toast pecan pieces in bacon grease (or butter) with a pinch of salt until fragrant. Set aside.

3In a large bowl, sift together dry ingredients - sifting isn’t required for success but makes pancakes fluffier.

4In a medium bowl mix egg, milk, vanilla, butter, vanilla and maple syrup.

5Pour wet into dry and mix until just combined (lumpy is good).

6Pour in pecan pieces and bacon bits.

7Cook on griddle until bubbly, then flip. Cook until golden and cooked through.

8Serve hot, topped with pure maple syrup, bacon and additional chopped pecans for garnish.
