Maple Bacon Cookies
Makes 1 1/2 dozen

4 slices of thick cut bacon
1/2 cup tbsp maple syrup
1/2 cup brown sugar
3/4 cup butter, room temperature
1 cup brown sugar, packed
3 tbsp maple syrup
1 tsp vanilla
2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1Line a microwave safe plate with paper towels. Place the strips of bacon in a single layer on the prepared plate. Brush the front and back of each slice with some maple syrup. Spread the brown sugar over the bacon. Cook for four minutes or until slightly crispy. Move to foil or a wire cooling rack to cool. Let the bacon sit until it is completely cool, then place in a food processor to chop up. This step can be done up to two days prior to baking the cookies.
2Cream the butter until smooth and creamy. Add in the sugar followed by the egg, maple syrup, and vanilla and mix until well combined and smooth. Set aside.
3In a separate bowl, mix together the flour, baking soda, baking powder, and salt. Add the dry ingredients to the wet and mix until well combined and smooth. Fold in the chopped up bacon. Cover the dough and chill for at least one hour.
4Preheat the oven to 350°F and line three baking sheets with parchment paper.
5Roll the cookie dough into one inch balls and place on prepared baking sheet, flattening the tops slightly with the palm of your hand. Bake for 10-12 minutes or until edges are golden. Makes 1 1/2 dozen.
