Mango Lime Salsa
I love this simple vibrant recipe that works well on just about anything! Tacos, with chips, and over grilled steak or chicken!

2 large ripe mangos, peeled and small diced
1 small red onion, very small dice
1 jalapeño, seeded if you like and minced
1 medium red bell pepper, seeded and diced
1 ripe avocado, diced
a handful of cilantro, rinsed and chopped
1 large lime, juiced
kosher salt to taste
1Prep all ingredients. (seed the jalapeño if you don't want heat. leave them in if you're feeling it)
2Combine in a large and combine carefully to protect the avocado.
This recipe is highly customizable. Sometimes I make it without the red pepper or I adjust the avocado to mango ratio. All of these amounts can be adjusted for your liking. Use a different kind of pepper (serranos are amazing - and you could go hotter if you're feeling sassy!) I also don't give exact amounts for the cilantro or lime because everyone is weird and different and perfect and I want you to make this the way that makes your skirts fly up. You do you.
