What better way to beat the heat then with a smooth and creamy mango popsicle! Mangoes are loaded with health benefits such as helping to improve digestion, fighting heat stroke and boosting the immune system.

2 cups cubed mangoes
1 can coconut cream (let it sit in refrigerator overnight)
1/2 teaspoon cardamom
1 cup plain greek yogurt
1/4 cup honey or organic sugar
handful of ice cubes
1Peel mangoes and cut them into cubes.
2In a blender or food processor blend the mangoes with the honey or sugar and cardamom.
3Add the coconut cream and yogurt, then add your ice cubes. Blend.
4Check on the consistency to see if you like the thickness. If you’d like it a little thinner, add some almond or coconut milk. If you’d like it thicker try adding a little more ice.
5Pour the mango lassi in popsicle molds and freeze for 4-6 hours.
