Mango Cashew Chia Pudding
A dessert like guilt free mango experience.

frozen or fresh mango cubes or chunks
2 cups non dairy milk of choice
6 - 8 tbsp chia seeds ( 3 tbsp chia seeds per cup of liquid)
cashew nuts, handful
2 - 4 drops each, vanilla essence (optional)
1 1/2 - 2 tbsp , plus extra honey/ maple syrup/ agave syrup/4 chopped dates, divided
1Prepare your chia pudding overnight, or at least 1 hour prior to eating, by adding 6-8 tbsp of chia seeds and 2 cups of milk).
2Stir in and add vanilla essence and sweetener of choice (or dates if using).
3Stir again and refrigerate for at least 1 hour or overnight for best results.
4When ready to eat or to take to go, top up with fruit and nuts.
5Drizzle a little sweetener on top and enjoy!
