Mango Caprese Salad
Do you like traditional tomato caprese salads? Or, do you hate tomatoes, but wish you didn’t so you could eat a caprese salad, because they look so good? Either way, you’ll love this recipe. Mangos, mozzarella, and basil are amazing together. This is a very easy dish that you can take to any summertime party and people will think you’re a genius.

2 large ripe mangos, 1/2 inch cubes
8 ounces mozzarella cheese, 1/2 inch cubes
2 tablespoon olive oil
1/4 cup fresh basil, diced
salt and pepper to taste
1Caprese salads are usually served with the tomatoes and cheese sliced. However, slicing a mango is very difficult, as they are slippery and have a big core. So it is much easier to dice or cube the mango.
2After you have peeled and cubed the mangos, cut the mozzarella into cubes as well. Add both the cheese and mangos to a mixing or serving bowl.
3Add the olive oil, basil, salt, and pepper to the salad and toss. Chill before serving.
Definitely add a pinch of salt and pepper. It sounds unnatural to add salt and pepper to fruit, but trust me, it makes a big difference.
