Magical Vegan Cashew Cookie Bars
A tasty and delicious cookie bar that is easy to make and will wow all your guests! Vegan friendly!

1/2 vegan butter spread
1 and 1/2 cups graham cracker crumbs
1/4 cup coconut oil
1 cup cashew butter
2 cups sugar
2 tbs corn starch
2 cups oats
1 cup stick pretzels broken up
1 cup vegan chocolate chips
1Preheat oven to 375 degrees Fahrenheit
2place butter spread in a 9 x 13 glass baking dish and place in oven until it is melted
3Remove from oven and add graham cracker crumbs.
4Using the back of a cup, spread crumbs around until they are firmly pressed into the pan to form the bottom crust layer.
5In a sauce pan mix together and heat the coconut oil, cashew butter, corn starch, and sugar.
6Bring to a boil, stirring constantly. Once boiling stir another minute. Then remove from heat.
7Stir in oats until well mixed in.
8Pour cashew butter mixture over graham cracker mixture. Sprinkle with pretzels and chocolate chips.
9Bake for 15 minutes at 375 degrees Fahrenheit.
10Remove from oven and let cool.
11Try really hard not to eat all at once.
When adding the pretzels and chocolate chips try pressing them into the filling. This will make cutting them easier once they come out of the oven.
