Main Ingredients

3 lbs sweet potatoes, peeled and cut into fries (or frozen sweet potato fries)

1 can black beans, drained and rinsed

1 small zucchini, sliced into half moons

1 medium red onion, sliced thin

1 package mini sweet peppers (1 lb)

10 oz shredded cheddar

plain greek yogurt, cilantro, and salsa for serving

Preparation

1Follow the recipe for super crispy sweet potato fries, or grab a few bags of frozen sweet potato fries.

2Heat oven to 400 degrees. Place sweet potato fries on 2 sheet pans lined with parchment paper and bake until crispy, about 30 minutes. Remove from oven.

3While fries are baking, heat a few tablespoons of oil in a skillet over medium heat. Once hot, add zucchini, red onion, and sweet peppers. Saute for about 3-5 minutes. Top baked fries with sauteed veggies, black beans, and shredded cheddar cheese. Return to oven until cheese is melted and bubbly.

4Drizzle with Greek yogurt (thinned with a little milk, if desired) and fresh cilantro.
