Livesofit Falafel Bowl

Main Ingredients

1 acorn squash, peeled, seeds removed, and cut into 1- inch cubes

1 tbsp olive oil

1 tsp dried parsley

1 tsp garlic powder

1/2 tsp red chili flakes

salt and pepper to taste

1 red bell pepper, sliced

1 green jalapeno pepper, chopped and seeds removed

1/2 cucumber, cut into half moons

1 avocado, sliced

12 livesofit falafels

4 tbsp ranch dressing (homemade, or store-bought)

1 cup brown rice

2 cups of water

Preparation

1Preheat oven to 475°F. Combine diced acorn squash with olive oil and spices (next five ingredients) and place on baking sheet. Cook for 10 minutes, flip and cook for an additional 10 minutes or until tender. At the halfway mark, remove the squash, flip and place

2While the squash is cooking, combine brown rice and water. Bring to a boil over high heat, reduce to low and cook for 20 minutes or until rice is soft.

3Once squash and rice are cooked, it's time to assemble your bowl!

4Place 1/4 cup of rice on each plate. Then divide squash, red bell pepper, jalapeno, cucumber, avocado, and LiveSoFit falafels between the 4 servings.

5Drizzle each plate with 1 tbsp ranch dressing*, and enjoy!

Additional Notes

  • If you're not making your own ranch, make sure you are using one that has no additives and very little sugars. Also, pay attention to the ingredients; if you can't pronounce them, move on to the next Ranch brand!
