Main Ingredients

1 can chickpeas (18 oz), drained and rinsed

1/2 cup parsley

1/2 cup cilantro

1/4 cup buckwheat flour

1/2 juice of a lemon

1/2 tsp chili flakes or to preferred level of spice

1/2 white onion, diced

3 cloves garlic, minced

1 tsp ground cumin

salt and pepper to taste

2 tbsp olive oil


1Preheat the oven to 375°F. Brush a nonstick baking sheet with 1 tbsp olive oil.

2Combine all the ingredients excluding the remaining tbsp of olive oil into a food processor. Pulse until all the ingredients are finely ground.

3Shape the falafel mixture into 1.5 inch slightly flattened balls and place them on baking sheet. Brush remaining 1 tbsp olive oil onto the tops of each falafel ball.

4Bake for 15 minutes, flip, and bake for an additional 10 minutes.*


Additional Notes

*Be careful when flipping your falafels as they may be a bit crumbly. Use a proper spatula for best results!
