Light And Fresh Taco Salad

1 cup chopped organic kale leaves, stems removed and massaged
2 cups black beans, rinsed and drained
1 organic bell pepper
2 organic avocados
1/2 cup organic red onion
1 medium organic tomato (any variety)
1 cup organic corn
3/4 cup cilantro leaves, chopped
2 limes, juiced
4 tsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1 tsp cumin
2 tsp chili powder
1 tsp garlic powder
1Prepare the salad by dicing all vegetables. Be sure to gently massage the kale leaves to help soften them. This greatly improves the taste!
2Next, combine all ingredients for the dressing in a small bowl. Whisk together until fully combined.
3In a large serving bowl, combine all salad ingredients together. Stir in the dressing so all vegetables have been coated. Place in the refrigerator to chill until ready to serve.
4Store extras in an airtight container for up to a couple days.
