Main Ingredients

5oo grams plain flour

1 tsp yeast

100 ml warm water

100 ml milk

1 egg

130 grams melted salted butter

25 grams honey

50 grams ground flax

1 tsp vanilla extract

1 tsp baking soda

15 sugar cubes


1Combine 400g of flour, yeast, and sugar. Add the egg, water and milk. Mix with a dough hook until a sticky dough forms.

2Cover the bowl and let the dough rise until doubled.

3While the dough rises, crush up the sugar cubes into pieces 1/8-1/4 inch big.

4Once the dough has risen add the remaining flour, butter, honey, flax, vanilla, and baking soda. Mix with dough hook until combined into a dough that isn't sticky but stretches and easily forms a ball.

5Knead for 10 mins. Allow the dough to rise again until it doubles in size.

6Take the dough out and flatten it with your hands into a flat disk. Sprinkle the crushed sugar cubes onto the dough. Fold the dough over itself to trap the sugar into the dough. Knead the dough for a minute to mix the sugar throughout the dough.

7Separate the dough into balls. Allow them to rise for the final time, about 30 mins.

8Heat the waffle iron up to full heat. Place a ball of dough in the middle of the waffle iron and close it. Turn the temperature down to low (or unplug the iron if it doesn't have temperature controls).

9Serve with whipped cream or fruit (or both) enjoy!
