Main Ingredients

3 cups of white potatoes, chopped

1/2 cup red lentils, rinsed and drained

1 1/2 cups water

1 teaspoon curry powder

1 cup of onion, chopped

3 - 4 cloves of garlic, minced

1 teaspoon oregano

2 tablespoons tandoori masala spice blend

1 1/2 cups oil-free tomato sauce

1/2 cup coconut milk

1/4 - 1/2 teaspoon salt

1/2 of a lime, juiced

parsley for garnish, optional

Preparation

1Steam the chopped potatoes for 15-20 minutes or until they feel soft when poked with a fork.

2While the potatoes are steaming, add lentils, water, and curry powder to a pot and bring to simmer over medium low heat. Let simmer until lentils are cooked, about 20 minutes.

3Preheat the oven to 400 degrees.

4In a bowl combine the cooked potatoes and lentils by mashing them. It doesn't need to be totally smooth but the texture should be consistent. Add in a dash of salt and mix well. Start to form 1 1/2 inch balls with the dough. Place dough balls on a parchment paper lined baking tray or silpat and bake for 18 minutes or until the outside is lightly golden.

5Meanwhile, we will prepare the masala sauce on the stovetop. In a pan over medium heat, saute onions and garlic in a few tablespoons of water until onions are translucent, about 5-7 minutes. Then add tandoori masala and oregano and stir to coat. Next add in the tomato sauce, coconut milk, and lime juice and cook for about 6 more minutes. Turn off the stove and set pan aside to cool. After the sauce has cooled a little, blend the sauce with an immersion blender or blend using a countertop blender.

6Return the blended masala sauce back to the pan and add in the potato balls mixing to coat them with sauce. Turn the stove on low to heat them up for a few minutes before serving. Garnish with chopped parsley or other leafy green leaves of choice.
