Lemon Blueberry Waffles
Enjoy my return to making waffles with a gluten free flour mix by Simple Mills and a few personal touches!

1/2 cup simple mills pancake and waffle mix
1/2 flax egg
1 tbsp ground flaxseed
5 1/2 tbsp water, divided
1 zest of lemon
1/2 inch of vanilla bean, cut longways and scraped clean of beans
1/3 cup frozen wild blueberries
to serve (all optional):
1/3 cup blueberries, warmed on the stove top
1Preheat waffle iron. Lightly grease iron with coconut oil or olive oil if needed.
2Make flax egg by combining 1 tbsp flax and 2.5 tbsp water. Let sit 3-5 minutes until mixture has thickened.
3Add waffle mix, flax egg, and 3 tbsp water together in a large bowl. Stir to combine.
4Zest 1 lemon and scrape out the inside of your vanilla bean. This much vanilla should yield about 1/8 tsp of vanilla beans. Add both zest and vanilla into batter. Do not put actual vanilla bean pod in your recipe. Mix well.
5Add in frozen blueberries and fold into batter.
6Pour batter onto your waffle iron and allow waffles to cook per your waffle maker's instructions. Mine took 3-4 minutes per batch.
7When green light comes on, remove waffles carefully and place on rack to cool.
8Serve with a variety of toppings so everyone can customize their waffle!
Putting your waffles on a cooling rack will help your waffles stay crispy on both sides, yet fluffy on the inside.
If it's the first time you're using your waffle maker, make sure to pretreat your iron with oil to help prevent the waffles from sticking. The more you use it, the more nonstick it will get.
Any leftovers can be frozen and reheated in a toaster on a busy morning. Easy way to get in a filling breakfast on the go (waffle sandwich anyone??)
Use that leftover vanilla bean pod by dropping it into some vodka to make your own vanilla extract. Save the lemon to use another time. Just because the zest is gone doesn't mean the juice is. For the 3 tbsp of water you need to add into your waffle mix, feel free to substitute the milk of your choice.
