Lean Ground Turkey Soup
Esther's Kitchen. Family Recipe. The soup is filling yet very healthy.

1 pound lean ground turkey
1 medium onion
1/2 tablespoon canola/ olive oil
2 medium carrots, sliced
1 small head cabbage
2 medium fresh tomatoes, diced
1 large zucchini, chopped
1/2 bell pepper
2 cups water/vegetable broth
1/2 tsp salt
a pinch of black pepper
2 beef cubes
1In a large pot, saute and brown ground Turkey and onions in oil over a medium heat until Turkey is no longer pink .Drain.
2Add carrots, cabbage, bell peppers, water, salt, beef cubes, tomatoes and bring it to a boil.
3Reduce heat, cover and simmer for 15-20 minutes,stirring until vegetables are tender.
