2 cups unbleached all-purpose four
1/2 cup whole wheat flour
3 tsp baking powder
1/4 cup maple syrup
1/4 cup melted coconut oil
2 tsp vanilla extract
2 cups almond milk
1 - 2 tbsp chopped fresh lavender (depending on how strong you want it)

3Meanwhile, in a medium bowl, combine dry ingredients including lavender and whisk.
4In a small bowl, combine all liquid ingredients and stir to combine.
5Add liquid ingredients to dry ingredients and whisk again until fully combined.
6Using a measuring cup, pour about 2/3 a cup of the batter onto the waffle iron. Close the waffle iron and cook until browned, about 2-3 minutes.
7Remove waffle from iron and repeat with remaining batter.
8Top with berry compote and serve immediately.
