Lavender And Lemon Poppy Seed Paleo Cookies

Just in time for Easter, come these little sweethearts. Lavender and Lemon Poppy Seed Paleo Cookies are the kind of cookies you want to sip a cup of tea with. Fancy hat optional. They are an acquired and almost sophisticated taste. However, if you like lavender and lemon like I do, you will love these. I am shocked my lil guy loved them so much! I won't ask questions. Containing only one egg, grain free flours, and very little sugar, I don't mind sharing these guilt-free treats.

Main Ingredients

1 cup almond flour

1/3 cup coconut flour

1/2 tsp baking soda

1/4 tsp salt

1 tablespoon poppy seeds

1 room temp egg

1/3 melted coconut oil

1 tsp vanilla

1/4 cup coconut sugar (1/3 cup if you prefer a sweeter cookie)

3 - 4 drops therapeutic grade lavender essential oil

6 - 8 drop therapeutic grade lemon essential oil


1Preheat oven to 350 and place a silpat on a cookie sheet.

2Lightly mix flours, baking soda and salt in a bowl. In a larger bowl, with a hand mixer, cream together sugar, egg, vanilla and coconut oil. Slowly incorporate dry into wet ingredients. Mix will look a bit crumbly. At this point stir in poppy seeds and essential oils.

3In your hands- roll about a tablespoon each of dough into golf ball sizes. Gently/lightly press down each cookie onto silpat.

4Bake for 10-12 minutes or until cracks form. Cookies will not spread. Allow to cool and enjoy.
