Laura's Carrot Cake
This is a recipe that Laura's grandmother always has on hand and loves to make for her family and friends. It's a sweet, decadent treat - perfect with a cup of tea and some good company!

1 1/4 cup oil or melted butter
2 cups sugar
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
2 cups flour
1 tsp almond extract
1 cup pecans or walnuts (optional)
3 cups shredded carrot
3 cups icing sugar
1 8oz package cream cheese, softened
2 tbsp melted butter or margarine
1 tsp vanilla
1Grease and flour 9x13 baking pan, preheat oven to 350.
2Combine all dry ingredients (sugar, baking soda, baking powder, cinnamon, flour, salt). Combine wet ingredients (melted butter, eggs, almond extract and carrots) and gradually add to dry, mixing until uniform.
3Bake for one hour, ten minutes.
4Cool and top with cream cheese frosting: combine icing sugar, cream cheese, butter and vanilla and beat until smooth.
Nuts are optional; they can be added to the dry ingredients if you choose to use them.
