Smoked Chicken Salad With Blueberry Vinaigrette

Main Ingredients

4 boneless chicken breasts

1 cup white wine

1/2 cup fresh rosemary

3 garlic cloves

1/2 cup extra virgin olive oil

sauce

1 tablespoon dijon mustard

3 tablespoons blueberry vinegar

1/2 cup extra virgin olive oil

1 tablespoon sugar

salad

4 cups mixed greens

1/2 cup toasted pecans

1 apple

1/2 cup diced red onions

1/2 cup blueberries

4 slices bacon

make marinade with wine, rosemary, garlic and oil and allow chicken to marinate overnight.

Preparation

1Smoke or grill the chicken and tear into bite sized pieces. Cook the bacon over medium heat until crisp. Reserve the drippings. Combine the ingredients for the sauce (except oil), and stir until thoroughly mixed. Add the oil in small amounts, whisking until dressing thickens. Add chicken to bacon drippings over medium heat, or alternately, warm in a small amount of olive oil. Then add dressing to the chicken and heat to combine flavors. On a platter, arrange the greens, top with chicken, crumbled bacon and pecans. Garnish with onion and blueberries.

Additional Notes

I used a stovetop smoker to smoke the chicken and the flavor is fabulous, but chicken can also be grilled.
