Kitchen Sink Scramble!
This meal is simple, fast, delicious and healthy! Perfect for Breakfast, Brunch, Lunch or a Light Dinner! I call this Recipe "Kitchen Sink" because use whatever veggies you have in the fridge to make this Scramble!

1 tbsp avocado oil
1/2 orange or yellow pepper, diced
3 kale leaves, de - stemmed
1/2 cup grape tomatoes
2 eggs, organic & free range
1 tbsp sliced olives
1 tbsp goat feta cheese
1 artichoke, quartered
salt & pepper to taste
2 - 3 cups mixed greens
1In a skillet over medium heat, sautee the peppers and kale in avocado oil until fork tender (about 2-3 minutes). Add tomatoes and cook until soft (about 5 minutes total).
2Meanwhile, in a small bowl, whisk the eggs. Pour the egg mixture over the vegetables and stir until scrambled. Add olives, artichokes and feta and wait for the feta to soften.
3On a large plate, arrange a bed of mixed greens. Transfer the scramble on top of the greens.
4Season with salt and pepper.
Optional: Drizzle the salad- scramble with 1 tbsp olive oil if desired!
