Main Ingredients

2 pounds ground turkey

2 tbsp basil (i used dried and it tastes fine)

2 tbsp finely chopped oil-packed dried tomatoes (sun dried tomatoes)

1 tsp salt

1/2 tsp pepper

4 oz fresh mozzarella, thinly sliced (have never used this with mine to be honest)

8 hamburger buns

2 cups arugula

1 recipe pesto mayonnaise (this will change your life! skip the bun and add this! )

1 yellow sweet pepper, roasted and cut into strips

1In a large bowl combine the first five ingredients (through black pepper); mix well. Shape turkey mixture into eight 1/2-inch thick patties.

2Grill burgers, covered over medium heat for 10 to 13 minutes or until done (165 degrees), turning once and adding the cheese the last few minutes of grilling.

3Serve burgers in buns topped with arugula, roasted red pepper, and pesto mayonnaise (DO IT)

4Pesto Mayonnaise: In a bowl combine 1/2 a cup light mayo and 2 to 4 tablespoons basil pesto and stir
