Main Ingredients

1 large bunch of kale

2 chicken breasts

1 lemon

1 cup of fresh green beans

1 tablespoon olive oil

1/4 tsp sea salt

Cajun Seasoning

2 tsp salt

2 tsp garlic powder

2 1/2 tsp paprika

1 tsp ground black pepper

1 tsp onion powder

1 tsp cayenne pepper

1 1/4 tsp dried oregano

1 1/4 tsp dried thyme

1/2 tsp red pepper flakes

Cajun Caesar Dressing

1 clove garlic

1/2 juice from of a lemon

1 tsp grainy dijon mustard

1 tsp worcestershire sauce

1 tbsp hot sauce (i use crystal)

1/2 cup mayonnaise

1/2 cup greek yogurt

1/2 cup parmesan cheese

2 teaspoons cajun seasoning

Fried Okra

1/2 lb okra

1 egg beaten

1 cup corn meal or brown rice bread crumbs

1 tbsp cajun seasoning

1/2 cup coconut oil

Preparation

1Chop up and de-vein kale and sprinkle with olive oil, juice from half a lemon, and sea salt. Massage the kale and let it set at least 1 hour before eating (and as far ahead as 1 day in advance).

2Prepare cajun seasoning and set aside enough for dressing and okra. Use the rest to liberally season the chicken breasts.

3Bake chicken breasts on a baking sheet at 350 degrees for 15 minutes. Remove chicken from the oven and add green beans to the pan (sprinkle with olive oil) and bake for another 15-20 minutes until the chicken is cooked through and green beans are tender.

4Prepare dressing while chicken is baking by mixing together all of the ingredients using a blender or immersion blender.

5Heat up coconut oil in a non stick frying pan. Chop up the okra about 1/2 inch width and dip it into the egg mixture, then into the corn meal and Cajun seasoning.

6Place the breaded okra into the coconut oil until they are browned (this should take 2-3 minutes on each side)

7Assemble your salad by placing chicken chopped into strips, green beans, and dressing over the kale. Drizzle dressing over the top and enjoy!
