Keto Peanut Butter Chocolate Muffins

Main Ingredients

1 cup almond flour

1/2 cup monk fruit or erythritol

1 tsp baking powder

1 pinch salt

1/3 cup peanut butter

1/3 cup almond milk

2 large eggs

1/2 cup chocolate pieces (from a 90% cacao chocolate bar) or sugar free chocolate chips

Preparation

1Preheat oven at 350F

2Combine all the dry ingredients (except chocolate pieces) in a large mixing bowl and stir.

3Add in the peanut butter and almond milk and stir to combine.

4Add in 1 egg at a time, incorporating each fully.

5Fold in the chocolate pieces.

6Spray a muffin tin with coconut oil and add the batter. Bake for about 20-25 minutes at 350°F. *Keep a close eye here at around the 19-20 min mark as all ovens are different. The middle of the muffin should rise, and be a nice golden yellow colour. They're done when a wooden toothpick comes out clean.
