This recipe was created out of a need and craving for some good ol'fashioned rich and creamy grits, but due to being on the Ketogentic diet that was a nono, so I had to improvise. That's when Keto Grits was born.

1 cup of finely gound plain pork skins
1 cup of chicken broth
1/4 cup of heavy cream
1 1/2 tsp of almond flour
1 tbs of butter
1/4 cup of cheese (optional)
dash of black pepper
1Put Chicken broth and Heavy Cream in a sauce pan and bring to a boil.
2When mixture comes to a boil add pork skins and Almond flour.
3Put heat on low stir the mixture until it gets to the thickness you like. If its too thick add more broth.
4Serve with butter.
I love it with hot sauce.
