Kalteen Bars

You'll be as addicted as Regina George when you try our version of the legendary Kalteen Bars (made popular by the movie, Mean Girls)! Sadly, they won't "burn up all of your calories," but, it's perfectly fine to indulge in these without question. "Four for you, Glen Coco! You go, Glen Coco!"

Ingredients

1 cup vegan butter, measured then melted

1 cup powdered sugar

1 cup peanut butter (can be crunchy or smooth)

2 1/2 cups old-fashioned oats

pinch of salt

3/4 cup vegan miniature chocolate chips (we used enjoy life)

1 1/2 cup melted chocolate (about 1 ghiradelli bar + rest of the bag of miniature chocolate chips)

Preparation

1In a blender, pulse oats until they are half ground. Do not grind into a fine flour. It should be more of a coarse flour, with some whole oats scattered throughout.

2In a large bowl, combine melted butter, powdered sugar, peanut butter, oat flour, and salt. Use a wooden spoon fold and mix.

3Once mixed, pour in the 3/4 cup of chocolate chips and fold until incorporated.

4In an 8x8 dish, cut parchment paper to fit the dish. Transfer mixture to the dish and use your hands to press, making sure the mixture reaches the sides and is even. Place dish in the freezer for 30 min, or until firm.

5In a microwave-safe bowl, heat the rest of the chocolate in 20 second intervals, mixing each time until completely smooth.

6Remove the dish from the freezer and pour melted chocolate on top. Place in the fridge for 10 min to set.

7Cut into rectangular squares and enjoy!
