Kale Pesto With Basil Essential Oil
This delicious and nutritious Kale Pesto recipe was created by guest blogger Sara Flanagan from www.mshealthesteem.com and includes basil essential oil as a convenient and unique ingredient in place of fresh basil. The other unique ingredient to this dish, kale, is also filled to the brim with vitamin K and brings a fair amount of manganese, copper, vitamin A, vitamin C and calcium.

3/4 cup olive oil
2 drops basil essential oil
2 1/2 cups chopped kale (i used a mix of different kale species, but 1 type is also fine)
1/2 cup walnuts
2 cloves garlic
1 medium shallot
1/3 cup nutritional yeast
1 tsp salt
1Measure out your olive oil and add 2 drops of basil essential oils. Mix well and set aside
2Place the kale and walnuts into the bowl of a food processor and pulse a few times to break them up.
3Add the garlic, shallot, nutritional yeast and salt and pulse a few more times. Scrape down the sides of the food processor with a spatula.
4Lastly, pour in the olive and basil essential oil mix and blend once more, until well mixed.
5Add to pasta, enjoy on baked potatoes, or add it to a wrap as a quick, yummy sauce.
