Kale Caesar Salad

This is a crowd favorite in my home, we make it at least every 2 weeks. It's a spin off of my Uncle Tom's famous Caesar Salad recipe. It's perfectly delicious without the parmesan cheese but feel free to include if you'd like, as a sprinkle at the end or added into the dressing mixture.

Main Ingredients

bunch kale

1 lemon, juiced

1 lemon, zested

1/2 cup olive oil

4 minced garlic cloves

1 can of anchovies (discard the oil)

2 tsp black pepper

1/2 optional: cup grated parmesan cheese

Preparation

1Strip the kale leaves off the stems and chop.

2Place the kale in a salad spinner and rinse and dry leaves (if you prefer, you can wash the leaves prior to stripping off the ribs and towel dry).

3Place kale in a large salad bowl or tupperware (if you're saving for leftovers or storing before eating).

4Combine all dressing ingredients in a food processor, magic bullet, blender or Vitamix.

5Blend dressing until smooth and pour over kale leaves.

6Wash hands and gently massage the dressing into the kale leaves to soften.

7Either store in fridge to eat later or enjoy immediately!
