Vegan Kale Caesar Salad

6 - 8 cups kale leaves, stems removed
1/2 cup bulgar wheat, uncooked
1 cup water
1/3 cup cashews
3 tbsp olive oil
2 tbsp vinegar
1/4 cup hemp seeds
1/4 cup nutritional yeast
1 1/2 tbsp dijon mustard
1/2 tsp salt
1/4 tsp black pepper
1 cup + tbsp water
1Begin by removing the stems from the kale leaves. Break apart into smaller bite sized pieces and rinse. Massage kale to help break down the leaves; this is very important! Place in large serving bowl.
2In a small pot over medium-low heat, heat the water and add the bulgar wheat. Simmer until the wheat is soft, similar to quinoa or steel cut oats. Let cool.
3In a high powered blender, add all dressing ingredients. Blend on high for a minute until smooth and creamy.
4Top kale leaves with avocado, bulgar wheat, and dressing. Mix to combine so the leaves are covered with dressing.
