No. 03 Jimmy's Shrimp & Grits

Shrimp & Grits is a dish commonly found in the southern US. Grits can be difficult to find here in Nova Scotia, but may be found in some specialty stores and can be purchased online. It's a delicious, savoury, filling meal!

Main Ingredients

4 tbsp clarified butter

1 medium onion, finely chopped

2 - 3 tbsp flour

1/2 tsp cayenne pepper

1/2 tsp ground mustard seed

pinch each of marjoram and thyme

2 tbsp fresh parsley

1 tbsp chives, dried or fresh

1 tbsp herb & mushroom blend see note below

2 chopped tomatoes

1 cup chopped mushrooms (optional)

3 Cloves garlic

2 cups chicken broth

3 splashes worcestershire sauce

3 dashes of tabasco

salt and pepper to taste

shrimp or scallops

For the grits:

butter and cheese according to cheesy recipe on grits package

Preparation

1Sauté onion in clarified butter until softened. Add flour and whisk thoroughly until it comes together to form a thick roux.

2Add cayenne and herbs, tomatoes and mushrooms if using. Add broth, Worcestershire, tabasco, and salt and pepper. Simmer on medium for 15 minutes.

3Add seafood at the end, allowing time for it to reheat (if previously cooked) or to cook through (if raw).

4Serve with grits cooked according to package directions; Jimmy's version has added cheese and butter. Enjoy!

Additional Notes

BullyGoth Farm makes an herb and mushroom blend which you can purchase at the Yarmouth Farmers Market in NS. This can be omitted if necessary, but it's pretty great. There are many possible variations to this recipe, which Jimmy explains in the podcast episode. It can be served with rice if grits aren't available. Enjoy!
