Jicama, Papaya, Pomegranate & Cilantro Salad
A very easy and quite refreshing salad to make.

1 medium jicama
1/3 maradol papaya
1/2 bunch cilantro
2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
2 tablespoons kosher salt
1Peel & grate the Jicama on the large side of a box grater, place in a bowl with a couple of tablespoons of lemon juice, salt and extra virgin olive oil.
2Peel, cut and seed the papaya, add it to the jicama, toss and place in a bowl.
3Break the pomegranate on top and place torn sprigs of cilantro.
4Mix it all up before serving.
