Jackfruit & Chickpea Vegan Meatballs

1 can jackfruit (in brine)
1 can drained & rinsed chickpeas
handful of chopped parsley
1 tsp liquid smoke
1 tbsp cumin powder
1 tsp paprika
2 cups oat flour
1 tsp baking powder
salt to taste
1Preheat oven to 375°F
2Put everything except oat flour & baking powder into a blender or food processor and pulse until the texture is flaky like meat, and yet smooth - but not too smooth
3Scoop it all into a bowl and fold in the oat flour and baking powder until thick enough to roll into balls with your hands
4Add some water to your hands to making rolling these easier, then grab about 1-2 tbsp of the mixture and roll into a ball
5Place on a baking tray lined with a non-stick silicone mat or parchment paper & bake in the oven for 30 minutes or until crispy & golden brown on the outside
6Let cool for 5-7 minutes and they are ready to enjoy however you like!
