Italian Zucchini And Onions

This is a great way to use leftover sauce for a quick and easy side dish, especially when zucchini is in season but I make this all year long. This dish is a wonderful accompaniment to any meat or fish!

Main Ingredients

1 medium onion-peeled, sliced and cut into bite size pieces

3 small zucchini-peeled, sliced lengthwise and cut into bite size pieces

3 - 4 tablespoons of olive oil

1 teaspoon of course salt

1/4 teaspoon of ground pepper

1 teaspoon dried parsley

3 - 4 tablespoons of your favorite italian cooks pasta sauce


1Use a large frying pan and heat 3-4 tablespoons of olive oil on medium heat. (enough to coat the bottom of your pan).

2Add the zucchini and seasonings and mix thoroughly. Continue sautéing until vegetables are tender.

3Taste and add more seasonings if desired.

4Add 3-4 tablespoons (or more!) of your favorite Italian Cooks pasta sauce and heat thoroughly.
