Italian Veggie Pasta Salad With Sundried Tomato Chicken Sausage

This recipe takes under 20 minutes and is full of flavor. Plus, the add-in options of veggies are endless. Don’t like cucumber? Leave them out. Obsessed with bell peppers? Toss them in!

Main Ingredients

2 trader joe’s sun-dried tomato chicken sausage

2 tblsp olive oil

banza chickpea pasta

1/2 c. tessemae classic italian dressing

1 mini cucumber

1/2 c. cherry tomatoes (sliced in 1/2)


1Heat skillet over medium-low heat with olive oil

2Place chicken sausage in skillet and turn every 3-4 minutes until each side is crispy & cooked through.

3Slice up sausage or leave whole. Set aside.

4Chop cucumber into small to medium pieces

5Cut cherry tomatoes in half

6Toss veggies into a bowl with the Italian dressing. Set aside.

7Cook pasta according to box instructions

8Once fully cooked, drain hot pasta thoroughly

9Toss pasta in a bowl of ice water to flash chill, re-drain pasta thoroughly

10Combine pasta, veggies & dressing together in a bowl. Season with salt & pepper to taste.

11Serve immediately aside chicken sausage.

Additional Notes

*If not eating immediately, cover pasta salad & sausage in the refrigerator. Pasta salad is good for up to 1 week, sausage for 4 days.
