Main Ingredients

1 tablespoon olive oil

1 diced yellow onion

2 diced carrots

2 stalks diced celery

1 diced green pepper

1.5 lbs italian chicken or pork sausage from the butcher. raw

2 cloves garlic, minced

2 tablespoons tomato paste

32 oz fire roasted tomatoes (blend)

1/2 can full fat coconut milk

pinch ground nutmeg (to taste, optional)

celtic salt

freshly-ground black pepper

1 1/2 cooked lentil pasta-packages

1Heat olive oil in the Instant Pot insert on the hottest sauté setting. Add onions, carrots, and celery, pepper and cook until softened and lightly browned, about 4-5 min


3Add Italian sausage without the casing with 1 tsp salt and 1/2 tsp freshly-ground black pepper. Sauté, breaking up meats with a spoon, until browned and most of the juices have evaporated

4Add garlic, puréed canned tomatoes, and tomato paste 

5Place lid on Instant pot, seal, and set the unit to HIGH pressure for 20 minutes

6Cook pasta according to directions. I cook only to the least amount. You can always extend cooking time if needed. GF pasta overcooked is gross.

7Quick release pressure and carefully lift lid when the float drops. Switch the Instant Pot to the lowest heat sauté setting and bring to a bubble. Simmer, uncovered, for 5-10 minutes, stirring often, until the sauce thickens if you want to

8Stir in coconut milk. Season to taste with salt and pepper

9Serve over cooked pasta with plenty of freshly-grated DF cheese
