Instant Pot Brisket With Onion Gravy

3 lb beef brisket
2 tsp kosher salt, divided
1 tb cooking fat of choice
3 onions, sliced
6 cloves garlic, smashed
1 tsp dried thyme
1/4 c red wine
1 tsp pepper
2 tb tomato paste
1 c broth
1 tb worcestershire sauce
1 tsp xanthan gum
sliced green onions, for serving (optional)
1Set Instant Pot (IP) to saute function. While heating, sprinkle 1 tsp salt over all sides of brisket and rub into meat to coat well.
2Once heated, place brisket into IP and brown all sides (approx 3-4 mins per side). Remove from IP and set aside.
3Still using saute function, add cooking fat to IP, then add onion, garlic and thyme and saute for about 3 minutes.
4Once onions are starting to develop color, add wine, tomato paste, remaining salt, pepper and broth.
5Place brisket back into IP with onion/liquid mixture, cover, and set IP to slow cook for 4 - 4 1/2 hours (less if brisket is slightly under 3lbs, more if it is slightly over)
6When timer beeps, transfer brisket to cutting board and switch IP function back to saute.
7Add Worcestershire sauce and xanthan gum and stir until thickened.
8You can either slice brisket and put it back into gravy to coat, or serve the gravy on the side.
9Top with green onions before serving, if using.
This could alternately be made in a crock pot, just saute meat and veggies first in a pan on the stove and transfer to crock pot for remaining cooking time.
