Main Ingredients

1/2 medium yellow onion, diced

3 - 4 garlic cloves, minced

2 tsp ground cumin

1 tbsp chili powder

1 1/2 tsp spanish smoked paprika

1 tsp dried oregano

1/4 - 1/2 tsp cayenne pepper

3/4 tsp salt

6 cups water or vegetable broth, i used water and added a tsp of bouillon

1 1/2 cup dried black beans, rinsed and soaked if you have the time to soak

1 1/2 cup brown rice


1Set the Instant Pot to Saute mode and add a splash of water or broth.

2Once the broth or water is bubbling, add the onion and cook, stirring occasionally, until starting to soften, about 5 minutes.

3Add the garlic, cumin, chili powder, paprika, oregano, cayenne, and salt. Cook for another minute. Hit cancel to turn off the Saute mode on the Instant pot.

4Pour in the vegetable broth or water, dried black beans, and rice, then stir.

5Put the lid on the Instant Pot, close the vent and set to HIGH pressure at 30 minutes using the Manual mode.

6Let the pressure release naturally for 15 minutes, then release the rest of the pressure and open the lid. Stir the rice and beans, then serve and top with roasted corn salsa, avocado, and a squeeze of lime juice

Additional Notes

To save time, make the roasted corn salsa while the rice and beans are cooking.
