Indian Sprouted Mung Bean Salad
This is a recipe I learned while living with a host family in India.

Cook Time: 00:10
2 cups sprouted mung beans
1 tomato, chopped
1/2 cup cucumber, chopped
1/2 cup onion, chopped
1 handful cilantro (or mint), chopped
1/2 green chili, chopped (optional)
1 teaspoon chaat masala (or sub with salt, to taste)
1/2 teaspoon cayenne pepper (aka red chili powder) (optional)
1 tablespoon lemon juice (or less to taste)
1Cover mung beans in a container with water and soak overnight (8-12 hours).
2Line a colander with cheese cloth and place drained mung beans in the colander.
3Place colander in a dark, warm location for 24-48 hours, until beans have begun to sprout.*
4Place sprouted mung beans in a bowl and mix in remaining ingredients. Enjoy!
*For sprouting mung beans, I put them in my oven (turned off).
