Hummus Avocado Nori Rolls

Easy, quick, healthy and fun to make. Hummus adds protein and avocado adds creaminess while the veggies provide a satisfying crunch. Pack them in lunch boxes or serve them at your next get-together along side some raw nachos or summer rolls. I've been known to make this as a pre-dinner snack while cooking, too impatient to wait for the rest of the meal to come together!

Main Ingredients

4 sheets nori

1 avocado, sliced

2 large carrots, julliened.

6 inch chunck of cucumber, jullienned

11/2 cups packed shredded greens

1 cup shiitakes, sliced

1 teaspoon sesame oil

1 tablespoon rice vinegar

1 tablespoon balsamic vinegar

3 tablespoon soy sauce, and more for dipping

1/2 cup hummus


1marinade the greens in 1 tbsp of the soy sauce and the sesame oil.


  1. In a separate small container, marinade the sliced shitakes in 2 tbsp of soysauce and both the rice and balsamic vinegars. Set aside.

3Julienne the vegetables, and arrange your rolling station, setting out your bamboo mat, hummus, and small bowl of water.

4Time to make your rolls! Lay one piece of toasted nori on the bamboo matt. Then, dole up an even line of each ingredient vertically down the nori. Be careful not to put on too much or you will have difficulty rolling it up.

5Once all ingredients are neatly on the nori, use your hands along with the bamboo mat to roll it up tightly! Seal the ends of the roll with water.

6Slice into 6-8 rolls using a very sharp night. Serve with tamari or soya sauce.
