Hot Quinoa Cereal With Berries

This vegan hot cereal is a delicious alternative to regular oatmeal, packing a nutritious punch and a whole lot of satisfaction. This hot cereal is easy to throw together in the morning, and with all the fiber from the fruits and quinoa, you will be full for hours.

Main Ingredients

1/2 cup cooked quinoa

1 tbsp chia seeds

1 /2 cup almond milk (use 1/3 cup if heating in microwave)

1 tsp cinnamon

2 - 4 drops stevia liquid (optional)

1/2 cup fresh mixed berries

Preparation

1Soak chia seeds in enough water to cover the top of them. Let the chia seeds soak and expand for approximately 5 minutes. Cook quinoa per package instructions (see notes below).

2For the stove top: On low-medium heat simmer the almond milk and quinoa in a pot. Allow the quinoa to soak up most of the liquid or until the desired consistency is reached. Remove from heat and stir in soaked chia seeds, cinnamon, and stevia. Top with fresh berries.

3For the microwave: Heat almond milk and quinoa together in a bowl for 30 seconds (cooking times may vary). Take out the mixture and stir, then continue heating for another 40 seconds. Remove from the microwave and stir in soaked chia seeds, cinnamon, and stevia. Top with fresh berries.

4Then enjoy a nutrient-packed breakfast!

Additional Notes

You can choose to use cooked quinoa that you already have on hand, or cook a batch to serve. I love having a batch of plain quinoa on hand which makes throwing together this bowl of goodies in the morning a breeze. To add an additional nutty flavor, top with ground flax seeds or chopped nuts.
